Homemade Deep Dish Beef Pot Pie ...

I'm sure many of you remember the first time you were serves an banquet frozen pot pie for lunch or dinner. I wasn't really fond of the beef pie because i didn't like the way the brown gravy looked. Those pies were a staple in out house, mom would have 6 or more in the over at a time ...

Once I became a parent, I purchase almost the same food items as my mother did for my children. They loved the frozen entrees  that seemed to accumulate in the freezer. These were meals that quickly became an after school snack while waiting on dinner to be prepared. As I began to explore my own cooking habits, I realized I was a good cook, and everything tasted better freshly prepared.

A pot pie can be put together in a matter of hours. You are basically adding all the things you'd like on to you plate, mixed up into pie form. If you are a steak and potatoes kind of person, you would add you best cut of steak, potatoes a variety of other vegetables along with a good tasting pie crust and off you go.

Don't think for a minute you can't pull this off. It's a simple as making a cobbler. There are many shortcuts to this dish I'm pretty sure you will find one that's best for you. The most important thing to remember is, you want your meat to be as tender as possible.  You can do this by either cooking you meat in a crock pot or by baking you meat in the oven on a low setting for several hours. The tender the meat the better the pie.

Of course the same way you put this beef pie together you can do this for chicken as well. Or any meat your family like. I'm not too sure about fish, that's something we'd explore later.

Here's what was done to accomplish this delicious pie!

2 chuck steaks
fresh pie crust, or 1 ready made pie crust or 1 sheet of puff pastry
3 or 4 med-lg potatoes diced into fork size pieces
3-4 lg carrots diced into fork size pieces
1 onion diced
1 stalk of broccoli cut up
2 bay leaves
2tbls of flour or cornstarch make a roux with 1 1/2c water
1pk of beef bullion or 2 bullion cubs
your choice seasonings for the steak

Season stakes and place into a deep casserole dish. Shake on the packet of bullion, add the bay leaves and diced onion, bake @350 for 1 hour. After an hour of cooking, remove steaks for oven and cut into fork size pieces(you can also cut the steaks up before baking to save on time). Add potatoes, carrots and broccoli and bake until the veggies are fork tender. Mix up your roux with the flour or cornstarch and water, pour over the pie mixture and top with your crust and continue baking until the crust is golden brown ... Plate and serve with a nice side salad.

~ ENJOY!
